Spirit of Toronto’s Oyster Speakeasy & Raw Bar

Spirit of Toronto is thrilled to be welcoming back Patrick McMurray aka ‘Shucker Paddy’ for an Oyster, Whisky and Gin Pairing Experience!

Shuck & Tipple is the Shucker Paddy technique to best enjoy Oysters and Spirits as a food pairing.

1. Freshly shucked, take the Oyster and gently tip into your mouth, saving some Oyster liquor in the shell.

2. Two-Bite Chew: Aerate – by breathing in through the mouth – to better understand the various flavours of the Oyster.

3. Take the shell, with the Oyster’s liquor still inside, and tipple your choice of gin or whisky on the bar. The Oyster liquor acts as Branch Water to soften the alcohol, while the ocean salts will marry and boost the overall flavour profile.

4. Taste. Enjoy. Repeat!

  • Chappell Creek Oysters — Smoked with Connemara turf and served on a half-shell

Dunville’s 1808 from Belfast, N. Ireland

A blend of malt, grain and pot still whiskeys, strong and uncompromised, bold and confident, charming and honest like the city of its birth. A soft and creamy mouthfeel, vanilla, fruits, and a touch of orange and buttery smooth caramel malt.

 

Taketsuru Pure Malt Whisky from Japan

Earth, vanilla, dark fruit, honey, and baking spice. Medium-bodied and fruity with a long-lasting, graceful finish.

 

Mermaid Gin from the Isle of Wight

A smooth, refreshing and complex contemporary style, with fresh citrus, sweet spice and gentle juniper on the nose. The taste has citrus zing, combined with peppery spice and an earthy sweetness which is complemented by a hint of sea air. A long, layered and complex finish rounds off the experience with a well-rounded mouthfeel.
