Heart-felt pairings…

By now it’s tradition that Spirit of Toronto coincides with the Kentucky Derby, and this year we celebrate the occasion by teaming up with Jefferson’s Bourbon to present our Derby Lounge, where guests can treat themselves to a moment of indulgence as we pair a Whiskey Burger with a Brown Derby Cocktail — drum roll please!

For this year’s Whiskey Burger expect a BBQ beef slider with Melted Cheddar, crowned with Jefferson’s Bourbon-Caramelized Onions and Jefferson’s Bourbon BBQ Sauce, and served on a house-made Sesame Brioche Bun with Peppery Arugula and Pickles, or not – it’s your choice, and our chefs are happy to customize your burger to your liking!

Our suggested pairing is the Brown Derby Cocktail and our version will combine Jefferson’s Bourbon with freshly squeezed grapefruit juice, freshly squeezed lemon juice and a salted-honey syrup.

It’s the second most popular drink at the Kentucky Derby for a reason, and we think guests will be suitably impressed.
